素丁 200公克
乾辣椒 5支
花椒粒 10粒
薑片 10公克
調味料:
油 1湯匙
醬油 1/2湯匙
醬油膏 1/2湯匙
甘草水 1/2湯匙
糖 1/2湯匙
白醋 1/2湯匙
蕃茄醬 1小匙
高湯 2湯匙
香油 1小匙
太白粉水 1/3湯匙
作法:
一、乾辣椒切段,備用。
二、鍋熱後,加 1 湯匙油,爆香乾辣椒和花椒
粒,再放入調味料和素丁翻炒均勻,淋上醋和香油即可起鍋。
※如果不要太辣,可將乾辣椒及花椒粒爆香後的
辣油倒出,換新油再炒。 |

5 pieces dried red pepper
10 peppercorns
10 g. ginger slic
seasonings:
1 tbsp. oil
1/2 tbsp. soy sauce
1/2 tbsp. thickened soy sauce
1/2 tbsp. licorice juice
1/2 tbsp. sugar
1/2 tbsp. white vinegar
1 tsp. tomato sauce
2 tbsp. vegetarian broth
1/3 tbsp. cornstarch
1 tsp. sesame oil
directions:
1. Slice dried red peppers horizontally in short pieces and set aside.
2. When the tbsp of oil is sizzling hot in the wop drop in the dry red pepper pieces and the peppercorns.
※ For those who prefer not-so-hot, then discard the oil that was used to sizzle-fry the pepper pieces and peppercorns and start with fresh oil. |
