Vegetables For Long LifeSPRING ROLLS

Dice the celery, cabbage, carrots, and potatoes. Bring mushroom water to a boil and blanch all the vegetables except the bean sprouts (add extra water if necessary). Mix the blanched vegetables, bean sprouts, and mushrooms together, season using salt, soy, black vinegar, peanut butter—and set aside. Sift together 2 cups of whole wheat flour and 2 cups of white flour. Add enough water to make dough (soft, but not sticky), and divide into 12 pieces. Roll each piece out 1/8 inch thick, fill with vegetables, roll up and fry in oil until golden brown. Serve with condiments such as hot sauce, miso, etc. Any vegetables can be used.
